Grilled Asparagus, Eggs & Walnut Dressing

SERVES: 2

Ingredients

- 4 Medium Eggs

- 20 Green Asparagus

- 1 tsp Dijon Mustard

- 3 tsp white balsamic vinegar

- 50g Chopped Walnuts

- 1 tsp honey

- 90g Extra Virgin Olive Oil

- 10g Walnut Oil

- Salt & Pepper (to taste)

Method

- place your mustard, vinegar, honey, walnut oil & Olive oil into a bowl, and whisk until you reach a thickened dressing consistency. Set aside for later.

- On a high heat, in a dry frying pan, char the asparagus until lightly blackened in areas, turn the heat down, add the chopped walnuts, and continue to cook for 5 mins on a low heat. (this will lightly toast the walnuts at the same time).

- Boil your eggs to your liking, peel and halve.

- Place the asparagus & walnuts onto a serving dish, pour over your walnut dressing, top with the soft boiled eggs, season generously with black pepper and a little salt. Serve, and enjoy!
