Ingredients

- 225g Self-raising flour

- 1 level tsp Baking powder

- 225g Caster sugar

- 75g Ground almonds

- 150g Melted butter

- 2 Eggs

- 350g Apples (2 large or 3 small), cored, halved and sliced

- 25g Flakes almonds, for the top

Method

- Preheat the oven to 170ºc. Grease a deep 20cm (8in) diameter, loose-bottomed baking tin.

- Mix all the dry ingredients together. Then add the melted butter and eggs, mix well.

- Spoon half the mix into the tin. Cover with the sliced apples. Then spoon the rest of the mix on top, spread out as well as you can.

- Sprinkle flaked almonds over the top, and bake at 170ºc for 1.25 hours until a knife comes out clean and/or the cake shrinks away from the sides of the tin.
