Ingredients

-1 Loaf of sourdough.

-300g Chorizo.

-500g Manchago.

-100g Jambon.

-1/2 Nutmeg.

-Flacked Sea Salt and Cracked Black Pepper.

-50g Plain Flour.

-50g Butter. 

-500g Milk.

Method

- In a medium size pan, melt your butter and bring to a foaming stage. Then add your flour and whisk until bubbling and lightly golden.

-Whisk in the milk and bring to a simmer. Continue whisking continuously until thickened and cooked out for five minutes.

-add 150g of grated manchago and your sliced Jamon Along with salt, pepper and grated nutmeg. stir and Set aside.

-toast two slices of sourdough and top with the béchamel. Then Slice your chorizo and make A sandwich with some of the grated cheese  then top with the béchamel. Repeat the process for the other 3 croques sẽnors.

-bake in a pre-heated over a 200°c for eight minutes then serve.

-for a “croque señorita”, add a fried egg at the end.. Enjoy!
