Burrata & Roasted Tomato Sandwich

Prep time: 20 mins | Serves: 2

Ingredients:

• 250g cherry tomatoes

• 15g olive oil

• 2g sea salt

• 1g freshly ground black pepper

• 1g dried oregano (optional)

• 2 ciabatta rolls or 4 slices of sourdough bread (approx. 80g each)

• 150g burrata

• 10g basil leaves

• 10g balsamic glaze or reduction

• 10g extra virgin olive oil (for finishing)

Method:

1. Preheat your oven to 200°C.

2. Place the cherry tomatoes on a tray, drizzle with olive oil, and season with salt, pepper, and oregano if using. Roast for 12–15 minutes until blistered and soft.

3. Slice the ciabatta rolls in half and lightly toast or grill until golden.

4. Spread the burrata over the base of the bread, letting it fall naturally into soft layers.

5. Spoon the warm roasted tomatoes on top, drizzle with balsamic glaze and a touch of olive oil, then scatter with fresh basil leaves.

6. Sandwich together and serve immediately — warm, juicy, and utterly irresistible.

Storage:

Best eaten fresh! If needed, store roasted tomatoes separately in an airtight container in the refrigerator for up to 2 days. Warm gently before assembling.
