Bacon, Brie & Honey Bites

Prep time: 20 mins | Serves: 4-6

Ingredients:

• 1 sheet ready-rolled puff pastry (320g)

• 120g Brie, cut into 12 small cubes

• 4 rashers streaky bacon (120g), cooked until crisp and cut into small pieces

• 20g runny honey (plus extra for drizzling)

• 1 egg yolk (20g), beaten for glazing

• 2g sea salt

• 1g freshly ground black pepper

• 5g fresh thyme leaves (optional)

Method:

1. Preheat your oven to 200°C and line a baking tray with parchment paper.

2. Unroll the puff pastry and cut into 12 even squares (around 6cm each).

3. Place a cube of Brie in the centre of each square, top with a few bacon pieces and a drizzle of honey.

4. Fold the corners slightly toward the centre or leave open for a rustic look. Brush the edges with beaten egg and season lightly with salt and pepper.

5. Bake for 15–18 minutes until puffed and golden brown.

6. Drizzle lightly with extra honey and sprinkle with thyme leaves before serving warm.

Storage:

Best enjoyed fresh from the oven! If needed, store cooled bites in an airtight container in the fridge for up to 2 days. Reheat in a hot oven at 180°C for 5–6 minutes to restore crispness.
