Spiced Winter Plum Pancakes

Prep time: 30 mins | Serves: 4

Ingredients:

For the Pancakes:

• 180g plain flour

• 10g baking powder

• 4g sea salt

• 40g soft brown sugar

• 2g ground cinnamon

• 1g ground ginger

• 1g ground nutmeg

• Zest of 1 orange (approx. 5g)

• 2 eggs (100g)

• 200g milk

• 40g unsalted butter, melted (plus extra for cooking)

• 5g vanilla extract

For the Caramelised Plums:

• 200g ripe plums, sliced

• 20g unsalted butter

• 25g light brown sugar

• 10g orange juice

• 5g honey

Method:

1. In a large bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, ginger, nutmeg and orange zest.

2. In a separate bowl, whisk the eggs, milk, melted butter and vanilla. Combine the two mixtures until smooth and thick.

3. Heat a non-stick pan with a little butter. Spoon in about 60g of batter per pancake and cook for 2–3 minutes on each side until golden and fluffy. Keep warm.

4. For the plums, melt butter in a small pan, add brown sugar, orange juice and honey, then stir until glossy. Add the sliced plums and cook for 3–4 minutes until soft and syrupy.

5. Stack the pancakes high, spoon over the caramelised plums and drizzle with the syrup from the pan. Finish with a little extra honey or a dusting of icing sugar if you fancy.

Storage:

Best enjoyed fresh! If needed, store cooled pancakes and plums separately in airtight containers in the refrigerator for up to 2 days. Reheat gently in a pan before serving.
