Gingerbread Men
Prep time: 1 hr | Serves: 20
Ingredients:
• 350g plain flour
• 5g bicarbonate of soda
• 10g ground ginger
• 5g ground cinnamon
• 2g ground nutmeg
• 2g sea salt
• 125g unsalted butter, softened
• 100g light brown sugar
• 100g golden syrup
• 50g black treacle
• 1 egg (50g)
Method:
1. In a large bowl, whisk together the flour, bicarbonate of soda, ginger, cinnamon, nutmeg and salt.
2. In another bowl, beat the butter and sugar until light and creamy. Add the golden syrup, black treacle and egg, and mix until smooth.
3. Gradually add the dry ingredients, stirring to form a soft dough.
4. Flatten the dough into a disc, wrap in cling film and chill for 30 minutes.
5. Preheat your oven to 180°C and line two baking trays with parchment paper.
6. Roll the dough out on a lightly floured surface to about 5mm thick. Cut out your gingerbread men and place them onto the trays.
7. Bake for 10–12 minutes until golden and just firm at the edges. Allow to cool completely before decorating with icing if you fancy.
Storage:
Once cooled, store in an airtight container at room temperature for up to 1 week. They’ll stay crisp and full of that perfect festive spice.
