Spiced Pear & Walnut Crumble with Maple Cream

Ingredients

For the Filling

• 600g ripe pears, peeled and sliced

• 40g light brown sugar

• 10g plain flour

• 5g ground cinnamon

• 2g ground ginger

• 2g ground nutmeg

• 10g lemon juice

• 15g brandy or 5g vanilla extract (optional, for extra warmth)

For the Crumble

• 100g plain flour

• 60g cold unsalted butter, diced

• 50g light brown sugar

• 40g rolled oats

• 50g walnuts, roughly chopped

• 2g sea salt

For the Maple Cream

• 150g double cream

• 30g maple syrup

Instructions

1. Preheat your oven to 180°C.

2. In a bowl, toss the pears with brown sugar, flour, spices, lemon juice, and your choice of brandy or vanilla. Mix well, then spoon into a baking dish.

3. For the crumble, rub the flour and butter together until it resembles breadcrumbs. Stir in the sugar, oats, walnuts and salt.

4. Sprinkle the crumble topping evenly over the pears.

5. Bake for 30–35 minutes until golden and bubbling.

6. Meanwhile, whisk the double cream with maple syrup until softly whipped.

7. Serve the crumble warm with a generous dollop of maple cream on top.

Storage.

Once cooled, store any leftover crumble in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven before serving. Keep the maple cream covered and chilled, and use within 2 days.
