Apple & Blackberry Crumble

Ingredients
Filling:
- 600g Apples, peeled, cored, and sliced
- 250g Blackberries
- 2 tbsp Honey
- Juice & Zest of 1 lemon
- Pinch of vanilla powder
Crumble Topping:
- 150g plain flour
- 80g unsalted butter, chilled and diced
- 80g caster sugar
- 60g blanched almonds, blitzed to coarse crumbs
- pinch of salt
- 2g cinnamon powder
Method
1. In a large bowl, toss the sliced apples with the honey, lemon & vanilla Let them macerate for 15 minutes, then sweat in a pan for 10 minutes in a medium heat with a lid, fold in the blackberries & Transfer to an ovenproof dish.
2. Blitz blanched almonds in a food processor until coarse. In a separate bowl, combine flour and diced butter. Rub with fingertips to form breadcrumbs, then mix in sugar and the blitzed almonds.
3. Scatter the crumble mix evenly over the fruit so it’s fully covered.
4. Preheat the oven to 180°C (fan 160°C) and bake for 35–40 minutes, or until the topping is golden and the fruit is bubbling.
5. Allow to cool for 10 minutes before serving. Pair with custard, cream, or ice cream!
