Dark Chocolate & Mixed Nut Banana Bread.

Ingredients

•⁠ ⁠360g ripe bananas, mashed

•⁠ ⁠75g light brown sugar

• 75g Dark Brown Sugar

•⁠ ⁠115g unsalted butter, melted and cooled

•⁠ ⁠2 large eggs (approx. 100 g)

•⁠ ⁠5ml vanilla extract

•⁠ ⁠260g all-purpose flour

•⁠ ⁠8g baking powder

•⁠ ⁠4g salt

•⁠ ⁠200g dark chocolate chips

•⁠ ⁠100g mixed nuts, chopped

Method

1.⁠ ⁠Preheat oven to 175°C. Line a 23 cm x 13 cm loaf tin with parchment paper and lightly grease.

2.⁠ ⁠In a bowl, whisk together the flour, baking powder and salt.

3.⁠ ⁠In another bowl, whisk mashed bananas, brown sugar, melted butter, eggs, and vanilla until smooth.

4.⁠ ⁠Stir wet ingredients into dry ingredients just until combined; fold in chocolate chips and walnuts, being careful not to overmix.

5.⁠ ⁠Pour batter into prepared tin and bake for 55–65 minutes, or until a skewer inserted in the center comes out clean. Cool in tin for 15 minutes, then transfer to a wire rack to cool completely.

Storage.

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. For longer storage, freeze slices.
