Dark Chocolate & Mixed Nut Banana Bread.

Ingredients
• 360g ripe bananas, mashed
• 75g light brown sugar
• 75g Dark Brown Sugar
• 115g unsalted butter, melted and cooled
• 2 large eggs (approx. 100 g)
• 5ml vanilla extract
• 260g all-purpose flour
• 8g baking powder
• 4g salt
• 200g dark chocolate chips
• 100g mixed nuts, chopped
Method
1. Preheat oven to 175°C. Line a 23 cm x 13 cm loaf tin with parchment paper and lightly grease.
2. In a bowl, whisk together the flour, baking powder and salt.
3. In another bowl, whisk mashed bananas, brown sugar, melted butter, eggs, and vanilla until smooth.
4. Stir wet ingredients into dry ingredients just until combined; fold in chocolate chips and walnuts, being careful not to overmix.
5. Pour batter into prepared tin and bake for 55–65 minutes, or until a skewer inserted in the center comes out clean. Cool in tin for 15 minutes, then transfer to a wire rack to cool completely.
Storage.
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. For longer storage, freeze slices.
