Honey Mustard Pork Chops

Prep time: 1 hrs | Serves: 4

Ingredients

•⁠ ⁠ 2 pork chops

• 20g olive oil

• 10g unsalted butter

• 30g Dijon mustard

• 20g wholegrain mustard

• 40g runny honey

• 10g apple cider vinegar

• 2g sea salt

• 1g freshly ground black pepper

• 5g fresh thyme leaves (optional)

Method

1. Heat a drizzle of olive oil in a frying pan over medium-high heat. Season the pork chops with salt and pepper.

2. Sear the chops for 3–4 minutes per side until golden brown. Add the butter and thyme, basting as they cook.

3. In a small bowl, mix together Dijon mustard, wholegrain mustard, honey and cider vinegar until smooth.

4. Reduce the heat to medium, pour the honey mustard mixture into the pan and coat the chops evenly.

5. Cook for another 2–3 minutes, letting the glaze bubble and thicken into a shiny sauce.

6. Remove from the heat, spoon over the glaze and rest the chops for a minute before serving.

Storage

Best enjoyed fresh! If needed, store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan with a splash of water to loosen the glaze.
