Prawn Toast

Ingredients
For the Prawn Mixture
• 200g raw prawns, peeled & deveined
• 1 egg white (30g)
• 10g soy sauce
• 5g sesame oil
• 10g spring onion, finely sliced
• 5g ginger, finely grated
• 2g sea salt
• 1g white or black pepper
For the Toast
• 4 slices white bread, crusts removed
• 20g sesame seeds
• 200g neutral oil (for shallow frying – sunflower or rapeseed)
Method
1. Place the prawns, egg white, soy sauce, sesame oil, ginger, salt and pepper into a food processor. Blend until smooth and sticky. Stir in the spring onion.
2. Spread the prawn mixture evenly across the slices of bread — right to the edges.
3. Sprinkle sesame seeds generously over the top and press lightly so they stick.
4. Cut each slice into triangles or rectangles.
5. Heat the oil in a frying pan over medium heat.
6. Place the toasts into the pan, prawn-side down first, and cook for 2–3 minutes until golden. Flip and cook the bread side for 1–2 minutes more.
7. Remove and drain on paper towel. Serve hot, crunchy and glorious — with sweet chilli dipping sauce if you fancy.
Storage.
Best enjoyed fresh!
If needed, refrigerate uncooked prawn mixture for up to 1 day. Fried toasts can be reheated in the oven at 180°C for 5–7 minutes — avoid the microwave to keep them crisp.
