Lemon & Shallot Dressing

Makes: 1 jar
Ingredients
- 50 ml freshly zested & squeezed lemon juice
- 100 ml extra-virgin olive oil
- 20 g shallot, finely sliced
- 2 cloves of garlic, minced
- 1 bay leaf (fresh)
- 3 g fine sea salt (adjust to taste)
- 2 g freshly cracked black pepper
- 5 g honey or sugar
Method
1. In a mixing bowl or jar, combine the lemon juice & zest, shallot, garlic, crushed bay leaf, honey or sugar, salt, and pepper. Whisk or shake well.
2. Gradually add the olive oil, transfer to your container, shake and store in the fridge for up to 2 weeks. Shake well before serving.
Enjoy this zesty dressing over salads, roasted vegetables, or grilled dishes. I personally love it over a good piece of salmon, or on my roast spuds!
