Finger Lime Caviar & Passionfruit Dressing

Ingredients

•⁠ ⁠2 passionfruit

•⁠ ⁠zest and juice of 2 lemons

•⁠ ⁠220g extra virgin olive oil

•⁠ ⁠20g honey

•⁠ ⁠4g sea salt

•⁠ ⁠2 finger lime pearls

Instructions

1.⁠ ⁠Place the passionfruit pulp, Lemon, Honey, salt into a bowl. Whisk to combine, then slowly stream in the olive oil while whisking until emulsified. Gently fold in the finger lime pearls to keep their pop. Pour into a jar and shake what your mama gave you—just enough to bring it all together!

2.⁠ ⁠Taste and adjust seasoning if needed—more salt for punch, vinegar for brightness, Honey for sweetness.

Storage

Once in an airtight container or jar, store your dressing in the refrigerator for up to 2 weeks. Separation is totally normal—shake well before each use. Always use clean utensils and avoid double dipping!
