Avocado, Lime & Coriander Dressing

Ingredients

•⁠ ⁠150g ripe avocado (flesh only)

•⁠ ⁠100g plain Greek yogurt

•⁠ ⁠40g fresh lime juice

•⁠ ⁠20g fresh cilantro (leaves and tender stems)

•⁠ ⁠10g jalapeño (seeded for mild heat)

•⁠ ⁠6g sea salt

•⁠ ⁠1g freshly ground black pepper

Instructions

1.⁠ ⁠Place all the ingredients into a blender or a tall jug and use an immersion blender. Blend until smooth and creamy. Then pour the dressing into a jar and shake what your mama gave you, until silky!

2.⁠ ⁠Taste and adjust seasoning if needed — a pinch more salt, pepper, or lime juice to suit your palate. Add a splash of cold water (10–30g) to loosen if you prefer a thinner dressing, or extra jalapeño for more heat.

Storage

Once in an airtight container or jar, store your dressing in the refrigerator for up to 5 days. To minimise browning, press a piece of baking parchment or wrap directly onto the surface. Give it a good shake before each use, as slight separation is normal. Always use clean utensils and avoid double dipping! 🙌
