Spiced Apple Fritters
Prep time: 20 mins | Serves: 4-6
Ingredients:
• 200g apples, peeled and diced
• 120g plain flour
• 30g caster sugar
• 6g baking powder
• 2g ground cinnamon
• 1g ground nutmeg
• 1g ground ginger
• 2g sea salt
• 1 egg (50g)
• 100g milk
• 5g vanilla extract
• 10g melted butter
• Oil for frying (sunflower/rapeseed)
• 40g icing sugar (for dusting)
• 10g honey or maple syrup (optional drizzle)
Method:
1. In a bowl, whisk together the flour, caster sugar, baking powder, cinnamon, nutmeg, ginger and salt.
2. In a separate bowl, mix the egg, milk, vanilla and melted butter until smooth.
3. Combine the wet and dry ingredients, then fold in the diced apples. The batter should be thick and spoonable.
4. Heat oil in a pan to 170°C. Using two spoons, drop small scoops of batter into the hot oil.
5. Fry for 2–3 minutes per side until golden, crisp and puffed.
6. Drain on kitchen paper, dust generously with icing sugar and finish with a drizzle of honey or maple syrup if you’re feeling extra.
Storage:
These are best eaten fresh and warm. If needed, store cooled fritters in an airtight container for up to 1 day and reheat in the oven at 180°C for 5–6 minutes to crisp them back up.
