Orange & Rosemary Roasted Cod

Prep time: 20 mins | Serves: 2

Ingredients:

• 300g cod fillet (2 pieces)

• 20g olive oil

• 10g butter, softened

• Zest of 1 orange (5g)

• Juice of ½ orange (25g)

• 5g fresh rosemary, finely chopped

• 10g honey

• 5g garlic, finely chopped

• 4g sea salt

• 2g freshly ground black pepper

• Extra orange slices (optional, for roasting)

Method:

1. Preheat your oven to 200°C.

2. In a small bowl, mix together the olive oil, butter, orange zest, orange juice, rosemary, honey, garlic, salt and pepper until well combined.

3. Place the cod fillets in a roasting dish and spoon the orange–rosemary mixture over the top. Add a few thin slices of orange if you want it extra beautiful.

4. Roast for 10 minutes until the cod is flaky, glossy and just cooked through.

5. Spoon over the warm citrus juices from the tray and serve immediately — stunning with new potatoes or a simple green salad.

Storage:

Best enjoyed fresh. If needed, store cooled cod in an airtight container in the refrigerator for up to 1 day. Reheat gently in a low oven to keep it tender.
