Raspberry & Tonka Bean Dressing

Makes: 1 jar

Ingredients

- 150g raspberry puree (fresh raspberries blended)
- 20g raspberry vinegar or Merlot vinegar
- 200g extra virgin olive oil
- 50g honey
- 1/2 grated Tonka bean (a light touch – it’s aromatic!)
- 2g sea salt

Method

1. Place all the ingredients into a bowl. Whisk gently until smooth and the ingredients are well combined.
2. Pour the dressing into a clean jam jar, seal it tightly, and shake what your mama gave you for a final mix!

Storage

Once in an airtight container or jar, store your dressing in the refrigerator for up to 2 weeks. Shake well before each use, as separation is normal. Always use clean utensils and avoid double dipping.

Chef’s tip:

Drizzle over ice cream with a handful of toasted almonds for a great pudding.
